Cascara means husk in Spanish: the skin and pulp of the coffee cherry, which is sun-dried. In Yemen, where coffee was historically first grown in earnest, large amounts of qisher are still drunk, a tea brewed from cascara.
This cascara from Bolivia is sweet but slightly tart and resembles dried fruit. The flavour profile is dominated by tamarind, dates, figs, raisins and rosehip. It is delicious both hot and cold.
Brew in hot water for 4–8 minutes. Try iced tea with a little lemon, a pinch of raw sugar and fresh mint, or use it chilled in a drink.
