Dried coffee berry
Cascara is Spanish and means "shell". This is the skin and pulp from the coffee berry that is sun-dried. In Yemen, where people historically first started to grow coffee for real, quantities of Qisher, which is a tea brewed from this product, is still drunk.
This Cascara from Bolivia is sweet, but at the same time slightly sour and reminiscent of dried fruit. Which it actually is! The flavor profile is dominated by dried fruit: tamarind, dates, figs, raisins and rose hips. Incredibly tasty both hot and cold. You are free to experiment with recipes. Iced tea with a little lemon, a pinch of raw sugar and some fresh mint or why not use it chilled in a drink. Brewed in hot water for 4-8 minutes before consumption.
