A very tasty and spicy coffee with shades of dark chocolate. A taste sensation for the discerning coffee nerd. Ketiara is a female-led cooperative founded in 2009 by 32 people. Now they are almost 2,000 small farmers who want to promote the value of women in the coffee industry. Coffee processing: The traditional processing method for the island of Sumatra is the so-called "wet hull", in the local language Giling Basah. This process consists of an initial fermentation on coffee cherries in 12-18 hours and then drying in 5-6 hours. The parchment is then removed when the humidity is still between 30 and 40% and the beans are then dried without parchment until the final 13% is reached. This process makes it possible to obtain the typical green-bluish color of green coffee and a cup profile with intense fullness and moderate acidity.
